Smoke em if ya got em! Urugway wagyu smoked to 50°c internal, then I got a little bit too excited on the sear, but the crunch was unreal. For 60€/kg, I don't know if I've ever eaten a better steak.

    Uruguayan beef has really gotten back to even better quality these days and really powered through the mediocre stuff that was exported 10-ish years ago. Will always choose uruguay over any domestic or other euro beef these days
