    I do anywhere from 18-32 hours at 131, have yet to try 36 hours. What temp did you do?

    I like to smoke them first until the temp reaches ~130, the SV at 135 for 40 hours. Insane results.

    Looks like you did pretty good there. I like to render the fat a bit more.

    I’m cooking one right now. I usually do 24/hrs at 132 but, because it happens to be well marbled (for chuck, anyway) I bumped up temp to 135 to better render the fat. I’ll go to 137 last hour. When I SV Rib Eye, I go to 137 for an hour. Let’s see if this works on Chuck
