Somehow my wireless probe got destroyed in the sink. I could have pulled it out a little sooner but I’m still happy with the cook on it. The meat was still super tender and tasty. The fat even got a little crispy like cracklings or chicharrones.

    Well done, Picanha is so fucking annoying to salt right since it is salted more than other cuts. Too little and it won’t flavor enhance the thick roast’s natural beefiness enough, too much and yk… to salty

    I love this cut though
