Found this in a cookbook my elderly neighbor gave me. Said her mom wrote it down for her years ago but she never made it.

With that onion and celery it kind of feels like hot tuna eel salad.

    Catching and eating eel used to be much more common. My only encounter has been eel sushi, which is fine.

    Fun fact, not related to your neighbor: in medieval Europe, payment in dried eels was a thing.

    As far as I can tell the eel is simmered in the court bouillon with the onions and celery, like you would poach any other fish. I would never describe this as like a hot tuna salad.

    We have lamprey eels around here. Indigenous harvested them at Willamette Falls.

    Eel is really good. I just have to think of it as a fish and not a modified snake lol.
