Good morning, Newdists! I’m sorry, but I don’t have much inspiration this morning. It’s been one of those weeks. But I do have YouTube to fall back on!

As I’ve mentioned before, we’ve been trying to eat a lot more fiber here while also cutting down on the grocery bill. I never thought I’d see the day, but I’ve been getting the BF to eat fully or mostly vegetarian, bean-forward dishes. And what good timing, with the country and world teetering on the edge of economic collapse. We all might need more bean dishes in our arsenal soon enough!

I have to credit Youffraita for introducing me to Giovanni Siracusa in one of her recent New Day Cafe diaries. It couldn’t have come at a better time. His YouTube channel features a lot of clean, simple Italian dishes that are light on meat and heavy on beans (and pasta). And, as a bonus, he has the best head of hair on YouTube. I made his pasta with peas, from Youffraita’s diary, and was hooked:

The next dish I made was this pasta with chickpeas, which was quite a hit with both of us:

I don’t have a pic, but I also made this (very similar) creamy spinach and bean pasta:

Those are the only ones I’ve personally made so far, but I already have my next recipe lined up. I’m not a lentils fan, so I’m counting on Giovanni to convert me! His pasta with lentils will be on the menu this week:
