    Thill they’re fully blistered with some black spots.

    Until they’re blistered on all sides. If all you are trying to do is “cook” the flesh, there are certainly easier ways to do that. But if you’re after that rich, toasty flavor, you need the skin to be toasted.

    Why are you flipping them around so much, char them on one side then flip them until they are charred on the other. It isn’t a sautee pan.
