Spinach stew was one of the few dishes I couldn’t stand as a child. I still remember my mom gently insisting I take a few bites, promising that spinach would make me strong like Popeye the Sailor Man. Back then, it felt like a battle at every meal.
But as the years passed and I became a mother myself, I found myself cooking it often for my boys and to my surprise, I didn’t need a cartoon hero to convince them; they loved it from the very first spoonful.
Somehow, somewhere along the way, spinach stew became one of my own favorite dishes too.
The real magic, I’ve discovered, lies in the generous use of lemon zest and juice , it brightens the flavors and brings the whole dish to life.
It’s simple, healthy, and full of memories , I hope you’ll give it a try.

Ingredients:
⭐️A large bunch of fresh spinach, chopped
⭐️150g ground beef
⭐️2 medium onions
⭐️Olive oil
⭐️Zest and juice of one lemon
⭐️A handful of pine nuts
⭐️Salt and pepper

Method:
Chop the onions finely.
1. Sauté the onions in olive oil until soft and translucent.
2. Add the ground beef and cook until browned. Season with salt and pepper.
3. Stir in the pine nuts and chopped spinach. Cook over low heat until the spinach is wilted.
4. Add the lemon zest and juice, and let the stew simmer gently.
5. Adjust seasoning with additional salt and pepper if needed.
6. Prepare steamed rice separately.
7. Serve the spinach stew with the steamed rice and lemon wedges on the side.
