Chef Christian Le Squer personally selects former Sous Chef to oversee InterContinental Danang’s acclaimed French fine dining destination – Central Vietnam’s first and only MICHELIN starred restaurant

24 March 2026 (Danang, Vietnam): InterContinental Danang Sun Peninsula Resort, the five-star sanctuary nestled in 39 hectares of lush jungle on the Son Tra Peninsula, is delighted to announce the appointment of Jean-Louis Angulo as the new Chef de Cuisine of La Maison 1888, as it extends the legacy of epicurean excellence at this highly acclaimed fine dining destination – the only restaurant in Central Vietnam to hold a MICHELIN Star.

Formerly the restaurant’s Sous Chef, Chef Jean-Louis has a strong background in the gastronomic arts. Born in France to Peruvian parents, he spent his childhood travelling between Europe and South America, a diverse heritage that helped broaden his cultural and culinary perspectives.

Having trained in Paris, his career has been shaped by MICHELIN one, two and three star establishments, including Gordon Ramsay au Trianon in Versailles, L’Espadon at the Ritz Paris, and the legendary Le Cinq at Four Seasons Hotel George V Paris, where his skills were honed by Chef Christian Le Squer, the doyen of French fine dining and former global “Chef of the Year” who now oversees La Maison 1888.

Chef Jean-Louis clearly made a strong impression on the famously exacting Chef Christian, who appointed him Sous Chef of La Maison 1888, a position he has held for the last two years. Now as Chef de Cuisine, he will guide the restaurant’s culinary operations, leading a team of talented professionals and bringing Chef Christian’s inimitable style of “haute couture” cuisine to life.

Set in an elegant French Indochine-style mansion designed by Bill Bensley, which overlooks the ocean, La Maison 1888 was the first dining venue in Vietnam to be led by a MICHELIN three star chef: firstly Michel Roux, then Pierre Gagnaire, and now the legendary Christian Le Squer. Under the direction of Chef Christian, who held three MICHELIN stars for 23 consecutive years, the restaurant presents artistic cuisine that combines emotion with elegance, with each dish reflecting his passion for pushing the boundaries of taste. 

As Chef de Cuisine, Chef Jean-Louis will be ably assisted by a team of talented Vietnamese and international chefs. He will also work side-by-side with Head Sommelier Amedeo Bellini, and Assistant Sommelier Toan Nguyen, who oversee the restaurant’s multi-award-winning wine cellar.
