    Serranos will come in as green and will ripen to red if you let them grow long enough.

    When they are red they taste better (higher sugar and spice levels) but aren’t as shelf stable as green unripe ones

    I learned something last year. I read it and researched it to be true. I was told that any green pepper is not fully ripe yet. An example for me is that I like Cayenne peppers better fresh when they are green than waiting to get Red.
