You know what goes so well with blooming tulips and faintly chirping birds? Carrot cake. The moist, orange-hued and lightly spiced cake is practically synonymous with spring, and it just so happens to be the latest flavor of Costco’s popular bar cakes. (See you later, Crème Brûlée.)
I visited the warehouse this past weekend, and spotted the newest release during my stroll through the bakery section: Kirkland Signature Carrot Bar Cake. I obviously grabbed one. Here’s my honest review.

What You Should Know About the Kirkland Signature Carrot Bar Cake
Costco offers a seasonal lineup of bar-style cakes, like maple butter pecan for fall. The Kirkland Signature Carrot Bar Cake is actually back for a second year in a row. It features layers of moist carrot cake studded with plump raisins, pineapple, and walnut pieces, plus a cream cheese frosting that’s topped with toasted walnuts.
The cake is located in the refrigerated section of the bakery and retails for $18.99 in stores. (You can order it online for a few dollars more.) It serves up to 20 slices per cake, which is ideal if you’re hosting or attending any spring gatherings.

Our Honest Review of the Kirkland Signature Carrot Bar Cake
At first glance, this cake is beautiful. It, like the other bar cakes I’ve tried, is an eye-catching centerpiece — so much so, before digging in, I’d already considered picking up another one for an Easter brunch I’m attending. (Spoiler alert: After trying, I officially cemented that idea).
I actually wasn’t the first to sample this cake. My roommate — a self-certified carrot cake lover — grabbed himself a slice before I could. When I asked him how it was, he said two words: “It’s perfect.”
That got me excited, so I grabbed a bite from his plate. I thought: WOW, this carrot cake is legit. It’s deliciously moist and sweet with hints of spice from cinnamon and maybe a bit of nutmeg. All that sweetness is balanced by the extra tangy cream cheese frosting.
There’s also a good bit of texture going on from the bits of raisins, walnuts, and pineapple in the cake that make it more of an experience rather than a dessert. It might be a bit bullish to say, but I think this is the bakery’s best bar cake yet. I can’t wait to eat another slice later today (my roommate and I are rationing them to last through the week).
