



Finished a batch of some much need meal prep to restock my freezer yesterday night! In total I made 12 breakfast burritos, 3 burrito bowls, many cubes of taco "meat" for future bowls, and 3 containers (6 meals paired with more veg) of fried rice, + bonus eggshell powder (for homemade cat food) my partner ground up while keeping me company lol.
Sinangag spam egg breakfast burritos:
– 12 Tortillas
– ~3-4 cups White rice (pre-cooked) and combined with sauteed minced garlic
– 1 can of spam, cubed very tiny (airfry/bake is easiest)
– 12 Scrambled eggs
– 1 can of corn
– Kewpie mayo or homemade freezable version I already had
Combine sinangag (garlic rice) with spam and corn. Assemble burritos with the rice mixture, scrambled egg, and kewpie mayo. Wrap in parchment paper for easier microwaving! Microwave for 2.5 min from frozen.
Fried rice but not really:
– Tiny spam cubes
– White rice combined with sauteed minced garlic
– Frozen broccoli
– Canned corn
– Canned green beans
I actually way overestimated how much rice I needed so I pivoted and made this "fried" rice. I just heated up frozen broccoli and canned green beans in a pan, cut them small with scissors, and seasoned with mushroom powder. Then combined it with the rice-spam-corn!
Tofu lentil burrito bowls:
– 1 container firm tofu, grated
– 1 cup red lentils
– ~1-2 cups White rice combined with cilantro and lime
– Canned corn
– Diced tomatoes
– Diced onions
– Cheese (I used queso fresco and shredded taco mix)
– Shredded lettuce
– Avocado slices or guacamole
– Sour cream or greek yogurt
Cook grated tofu and lentils in a pan; add water to ensure the lentils cook down and taco seasonings (cumin, paprika, oregano, salt, garlic, onion, chili if you don't have a premade mix). After water is mostly cooked off, assemble bowls! Rice and "meat" mixture in a microwave safe container. All the toppings in another to add on top when you eat. If you don't care about texture being compromised for lettuce, tomatoes, and guac, then you can freeze them!
