I used this recipe for the cakes, except I swapped whole-grain bread crumbs for the saltines.

I then dressed the greens with EVOO and apricot balsamic vinegar. Served with pickles, cocktail sauce, and a squeeze of lemon.

    INGREDIENTS:

    1 (14.75 ounce) can red salmon, skin and bone removed, drained and flaked

    2 eggs

    ½ lemon, juiced

    1 tablespoon chopped capers

    ½ teaspoon salt

    ½ teaspoon ground black pepper

    ½ teaspoon cayenne pepper

    12 saltine crackers

    1 tablespoon bread crumbs, or as needed

    1 tablespoon olive oil

    Directions:

    Combine all ingredients except oil in a bowl. Mix well and refrigerated for 30 minutes. Form patties and fry in oil for 5 minutes per side. Combine mixed greens with dressing of choice. Serve with pickles, lemon wedge, and cocktail sauce with lots of horseradish.
