I make a variation of this throughout the summer (I add tomato wedges to mine and toss with a little basic Italian dressing). When it’s chilled right out of the fridge, it really cools you down.

I put pickled red onions in my cucumber salad a lot. This looks like a great idea tbh. I’m probably gonna try something like this soon

Rice wine vinegar, a little soy sauce, and toasted sesame oil will make this incredible

I do this almost every night! Cucumber, red onion, and sesame seeds with ginger dressing, and sometimes I add bacos. I’m a 90s kid, I love bacos.

Here in Colombia, to this salad we add some Mayo

I do this with cider vinegar, olive oil, salt, pepper. I let the vinegar soften the produce a bit.

This seems like a preparation for the process of pickling such produce!

This salad, with some dill (dried or fresh, either is fine), plus a loaf of good bread and a bottle of wine = my perfect dinner.
