Saw a post on here a couple days ago with the most gorgeous crust I've ever seen, where somebody air fried their steak at 400 til 125° throughout. So was that just a lie or what? This steak was $35 and I feel like I just microwaved it by the look of it. Sad

    Lmao bro I would never air fry a 35 dollar steak 💀 I would however air fry a cheap sirloin or something as a quick and easy dinner. The dog looks into it though 👍

    Well firstly thats a much bigger steak, it also has a bone which will absorb a lot of the heat. Secondly, was it room temperature when you put it in? Also did you let it rest uncovered in the fridge beforehand to dry out the surface?

    You need an air fryer that can hit 500 degrees to have a chance at a good crust.

    Their air fryer obviously got to and held the temperature better.

    You should get it red hot before trying. Next time spend $70.

    I’d fix this steak by giving it a flash sear on a pan so hot the oil catches fire and smokes.

    But as a self proclaimed lobbyist for Big Air Fryer, this has to be user error lol. Did u let it come to room temp ? Did u set it to 400⁰+ and leave it alone for the first 5-6 minutes? Did you check the temp/center and then let it rest (for me, preferably tented w/ foil) before cutting into it?

    Lol I’ve made dozens of air fryer steaks & they’ve never once looked like this, so I think you may have scammed yourself.

    This looks like it was steamed rather than fried. Preparing the steak is crucial. Next time, i’d get a cut without the bone, and that is relatively uniform in thickness to ensure even cooking.

    There is no magic steak button, you have to practice it whoever posted that post has probably done more than a few steaks in their lives.

    I’d say you didn’t have the heat in the air fryer hot enough like not even close to hot enough. If you insist on doing it in air fryer find a proper video otherwise I’d stick with a grill or a cast iron.

    Surely they did a reverse sear using an airfryer? No oven or airfryer is going to give you a crust, the science behind searing requires direct contact to create a crust.

    I mean, its the internet, people lie. You really need a hot surface before the steaks thrown on to get a crust or search. Maybe they ran the air fryer for 10 minutes before?

    I air fry steaks all the time. But I’m using $7 flat irons maybe a clearance sirloin or strip. Get the outside REAL dry and it will be adequate. It’s never gonna be as good as a piping hot pan. But I need a set and forget steak every few days

    My air fryer goes up to 450 and has a steak tray that rises it so it gets blasted more. Also did you preheat?

    The cook looks perfect, and I’m sure it tastes great. A nice sear is a bonus, not a necessity. This sub largely overrates perfect sears; I’m sure many people would be more than happy with this steak.

    I did the same thing with a tbone I got on sale so mine was about $18. Came out the exact same as yours lol. Might just be the type of air fryer. Learned my lesson and just gonna stick with grill or reverse sear. 😂

    Did you at least dry brine it and use racks, w no marinade. Or else yea it’s gonna miss a lot of taste from lack of Maillard since you are essentially steaming it with the trapped moisture

    400 degrees is too cold and there is no crust, that’s the seasoning making it look like there’s a crust. If you had it at 500-700 degrees this would’ve been amazing.

    I saw that post and I think a lot of that persons measurements were in Celsius? Did you adjust accordingly? I would read through the comments on that post and check cuz someone had made a comment about the measurements and that they may need to be tweaked

    One: not all air fryers are the same, two: did you pre-heat the air fryer for at least 5 mins?

    I like to sear my steak in a pan, then pop it into a pre-heated air fryer for 7-11 mins, depending on thickness. I mainly do this with ribeye btw. So don’t @ me if you use a lean steak.

  38. People are missing several things. I’ve not seen one post yet that covers it all:

    1. Crust is developed via the Maillard reaction which requires temperature and time. Moisture limits the maximum temperature because water must be evaporated first. To get a great crust dry brining overnight uncovered in the fridge (elevated slightly on a grate) is crucial. This lets you actually achieve a crust in something like an air fryer.

    2. Cheaper steaks actually work against you here. Less intramuscular fat means less fat to help form the crust. There’s a reason it’s so easy to form a crust on Wagyu but really hard on eye of round.

    3. Bones are an insulator. Just like (1) this inhibits crust formation.

    So try this with a well marbled dry brined steak and you’ll get way better results. That said I don’t care for this method. You get a better crust on a skillet if you can’t use a grill.

    Airfyer is fine for strips or small ribeyes but for a crust you need to sear it in a pan, reverse sear style

    My fiance only cooks our steaks on the airfryer and they always come out great with an amazing crust.

    Reverse sear the steak: 22 min +/- 1 at 220 in the air fryer (flip half way) for medium then sear three minutes each side in a preheated pan
