
I cook boneless thighs more than anything else. Almost weekly for years now. I like to cook them a few minutes a side over direct heat, flipping and moving as needed for even color and then move them indirect to finish. I usually add a bit of smoke and if I'm feeling fancy or want to impress I spritz 4-5 times throughout with white vinegar.

Boneless skinless thighs are my fave. Toss em with some oil and spices, throw em on the grill.
I just did boneless thighs yesterday. Grilled some pointed bell peppers and made wraps with lettuce, cucumber and a sweet and spicy sauce.
It was a delicious meal.
I like the entire piece for smoking, but direct grill these all the time.
I plan to bone my wife’s thighs later. Jokes aside, they’re one of my favorite quick bbq go-to dinners. My wife and I love to make a southwest salad and use these as the protein.
I’ll fight anyone who says there is a better cut of meat on the whole bird. Thighs are the fillet of a chicken.

I did Wednesday night. Za’atar and lemon marinade. Pulled them off and diced them up, served in pitas with some veg and sauces. Was awesome.
I marinade in Italian dressing and season with whatever bbq spice I want. Good stuff

All the time, they’re killer. Usually let them marinade in Lawry’s Mesquite while the grill is getting ready then throw them on.

I do bone-in, skin-on. Mostly because my wife loves them, chicken thighs are the best either way
Get bone-in thighs, cut along the bone, add the boneless meat into whatever meal you are making (tacos another great option) then smoke the bone-in part and the meat around it with your favorites smoked wing recipe and amaze your friends. I serve them and call them dragon wings.
