I’ve had Zlatá Praha booked several times since they opened, but despite living in Prague, something always came up. We finally made it—and I have to say, it was absolutely worth the wait.
A bit of context: Zlatá Praha is part of the newly renovated Fairmont Golden Prague (formerly Hotel Continental). The kitchen is led by Maroš Jambor, who has experience from Eleven Madison Park—and funnily enough, we found out he grew up just a few streets away from me in a small town in Slovakia. He now leads the team with his partner, and they also showcase their signature bread inspired by our hometown Trenčín (though baked here in Czechia).
The food:
We started with three amuse-bouches. All were great, but the standout for me was the vegetable broth (sadly no photo) and an “olomoucké syrečky” muffin—both packed with full and tasty flavor.
Next came cured Arctic char with horseradish and cucumber, which I had already seen on their Instagram. It somehow tasted even better than expected.
Second meal – the pumpkin custard with sea buckthorn and brown butter wasn’t exactly my personal favorite, but I appreciated the role it played in shifting the flavor profile.
Third – sturgeon with fennel, caramelized cream, and caviar followed—beautifully executed and very balanced.
A clear highlight of the evening: honey-roasted duck with cabbage, wild garlic, and jus gras. This might honestly be the best duck breast I’ve ever had. Tender meat and very well prepared.
Fifth was the fallow deer loin and sausage with celeriac, pine cone, and elderberry pontack was also excellent, though the sausage felt a bit heavy for me. Still, a very well-composed dish overall.
Pre-dessert (quince, flowers, pink peppercorn) worked nicely as a palate reset.
The main dessert—dark chocolate, hazelnut, and apricot délice—completely blew me away (second time that evening).
Petit fours were a great finish, and they even packed some for us to take home:
- Cranberry & cinnamon bonbon
- Pear, honey & clove tart
- Becherovka jelly (probably my favorite—coming from someone who has had plenty of Becherovka in their teenage years – traditional czech bitter)
Overall:
Food: 9.9/10, easily.
Service was attentive and friendly—they stopped by often and even chatted with us about culture and background, which added a nice personal touch. Very attentive. Some of the staff did not understand us properly.
One minor note: the table design felt a bit odd (limited legroom, a large divider in the middle), but it didn’t affect the dining experience in any meaningful way.
One keen eye note: I would maybe add more decor to the table or something. The plating itself is already minimalistic with the big table feeling a bit empty. But maybe it was just me.
And the view… absolutely stunning. If you can, book a window table and time it with sunset—Prague feels truly magical from up there.
Would definitely return and can only recommend.
