The shredded white stuff and the green leaf, are we supposed to eat it? It’s a great way to keep my sashimi from sticking to the plate, but I’m never sure if it’s just garnish/functional or if we eat it too?

you’re not necessarily supposed to eat it, it’s just garnish, but you can. The daikon (white stuff) is kinda tasty

I never use to, my Japanese wife always does. I got to like it. I wrap the daikon in the Shiso, dip it in the soy sauce + wasabi I use to dip the sashimi in.

Yes…It is an edible garnish. They both taste good dipped into soy with wasabi.

Beefsteak leaves are so good and the shaved radish is nice . My favorite local spot was the only place to serve it and I miss it. I would make a lil handball with some the tuna and beefsteak and it was much more palatable than plain tuna to me.

You don’t have to eat them, but they are absolutely edible. It’s a good way to avoid generating plastic and other material waste. In general, I prefer my garnish to be edible for that reason – lemon, shiso, lettuce, daikon, etc.
As for the taste, the shiso (leaf) has a very strong and unique flavour compared to the daikon (white strings.) I enjoy how shiso tastes, and may add it to my sushi if the man ingredient is clam, squid, octopus, etc. Daikon I will have at the end just to get rid of any lingering tastes when my meal is done.

I am a big fan of taking your middle piece or your final piece of sashimi and wrapping the shisho around it when you take your dip and bite. Quite the flavor treat!

I love both! Like others said, the daikon is a great palate cleanser.
I felt bad when I found out recently I had been thinking the shiso leaf was just like an ornamental garnish and throwing it away… since I found out it’s also totally edible, I tried it and love having a piece of it with the sashimi!

I eat it usually. Love shiso, I like to make a roll with shisi leaves, Kanpyo (pickled gourd strips, for a bit of tanginesss and acidity), salmon, otoro and ikura. Delicious, now I want to make some sushi.
Daikon is just a radish and I like it, it’s a little more radishy than the average radisg IMO but similar flavor. In little threads like thus, it’s very mild tasting.
I’ll just dip both in shoyu, maybe add a little wasabi.

Daikon (the cut white radish) is a good snack that you can have alone or with some soy sauce. Shiso leaf is often overlooked and can be eaten with sashimi to enhance the flavour. I would recommend placing the shiso against your sashimi and place the sashimi on your tongue with the shiso facing the top of your palate. This way you get balanced flavours, otherwise if the shiso is on your tongue, it masks the taste and texture of the fish.

Shredded daikon, and shiso leaf and both are edible. The only thing I don’t eat is the pickled ginger. It’s not “expected” that you eat it, but many do. If you don’t like it it would not be frowned upon to leave it.

The leaf is shiso, it tastes kind of like a cinnamon basil might taste. I love to eat it with the raw fish, and the white is shredded daikon, which is fabulous dipped in a smidge of soy sauce and eaten with fish, or plain as a palate cleanser as others have mentioned

TIL those are daikon. I always thought they were crispy rice noodles or something. Tasty anyway!

I like to eat the shredded daikon with richer cuts of sashimi (salmon, toro, yellowtail belly) as it adds some crunch and balances the fattiness.
