Minced lamb 1/2 kg with
1.5 teaspoons of cumin
1.5 teaspoons of coriander
1.5 teaspoons of paprika
1.5 teaspoons of turmeric
1/2 teaspoon pepper
1 to 2 teaspoons salt or to taste.
1/4 cup pine nuts roasted lightly
1 medium onion fine diced
2 teaspoons crushed garlic.
2 teaspoons olive oil
Toast pine nuts and then chop and cool.
Fry in oil the onion and garlic until soft and lightly golden. and cool.
In a bowl place minced lamb or meat of your choice add cooled nuts and garlic onion mix along with all dry spices. Mix well until all ingredients are combined.
Get skewers metal or wet wooden one and stick the mince mix onto the skewers by squeezing through your fingers and palm and make it into a tight sausage and flatten lightly.
Get your charcoal fire lit and when hot place your skewers lightly brushed with olive oil over the flame and start cooking. Rotate every few minutes or when you notice them starting to cook and brown lightly. The juices will drip onto the charcoal and give a beautiful flavor to the Kofta.
Do not overcook them. Turn a few times until they are cooked approximately 6 to 9 minutes depending on thickness.
If you don’t have a charcoal fire cook in a pan or on a BBQ.
When cooked take off the flame and make your wrap.
Salad ingredients
1 cucumber chopped into 1/4ers and slice into 2 -3 mm slices.
Cherry tomatoes 1/2
salt and pepper to taste.
olive oil 1 teaspoon
Cider vinegar 1 teaspoon
fresh mint chopped.
add these ingredients together and toss lightly.
Lettuce leaf ripped apart
Greek yoghurt 100ml
chopped mint
salt and pepper to taste
Mix together.
Flat bread Lebanese bread or tortillas
Lightly warm and toast your flat bread, spread lettuce and cucumber tomato salad on top add your de skewered lamb Kofta meat onto the wrap and add yoghurt dressing on top. Fold up and enjoy.
Finger licking lip smacking goodness.
