This is the best eel menu I’ve ever had and I honestly am not interested in going to any other unagi restaurants than this place going forward. Thank you to /u/m046186 for making that initial post on the restaurant. There’s a pretty solid chuka through-line through a lot of the courses here which surprised me as I forgot he worked at Wasa lmao.
These are the most fun type of posts to write where pretty much everything was amazing. Staff was solid too, super nice and great sake recommendations – the Shiraito Takarabune they popped open during the kimoyaki course was honestly a super great pairing (and I usually hate most of the special shichifukujin sake).
Eels today were:
1. Wild Eel from Hamamatsu, Kumamoto and Shizuoka
2. Farmed Eel from Miyazaki, Kagoshima and Shizuoka
Courses were:
1. Unagi owan – it sorta looks like a botan hamo, was prepped similar too. Unagi from Kumamoto w tanenoko from the same, wakame from something that started with Y and sounded like yuriage. Really nice, I loved the soup and went really nice with the sake I started with
2. Unagi harumaki filled with Takenoko, soramame and another bean. There’s was a sauce of nanoha and other stuff, a sansho salt and sudachi. This was insanely good, literally everything tasted good together as long as you didn’t combine them all in one
3. Shizuoka unagi sashimi w side of unagi kimo, what tasted like miso and greens + soy sauce (?) to dip. Loved every part of this – the naked unagi sashimi, the combo with the kimo & the sauce and so on – great texture and chew
4. Kimoyaki with batons of a lightly flavoured narazuke and urui, I really REALLY liked this. I mean I’ve liked everything but holy shit this one was good – the tare caked kimo w the freshness of the greens and what tasted like a really nice sesame seed oil (could totally be wrong about that) – shit was amazing
5. Unatama with unagi from Miyazaki and takenoko w some unagi jus. Just hit after hit dude wtf
6. Unagi inro-yaki with eggplant. I fucking hate eggplant and I loved this dish
7. Unagi shirayaki with fruits tomato, aloe jelly and some other stuff I didn’t catch. Man even for refreshing/bright courses they do an exceptional job
8. Unagi from Miyazaki lacquered in sansho jus and grated radish. I know why it’s here, I just didn’t love it – I appreciate its placement as part of the course though
9. Peking Duck style unagi w tianmianjang – really nice, crispyness of the unagi stayed intact and works really well in this style. Unagi from Kagoshima
10. Shirayaki unagi comparison – with sansho salt, sea salt and wasabi to taste. All excellent on their own or nice w different salts + the wasabi
11. Kabayaki don, pickles and akadashi miso soup. I’ll be honest – I thought this was just fine but the rest of the meal was so excellent it’s hard to care
12. Yokan, solid – slight yuzu taste
I’ve got no real criticisms that go beyond personal preference and I can’t think of any unagi meal I’ve ever had that was better than this experience. I reiterate that this is the greatest eel restaurant I’ve ever been to and I will be back. The whole meal was hit after hit essentially, barring like 1-1.5 courses that just weren’t for me, and I think I have it in me to go here every 6-7 months. Maybe 3-4 months if I actually lived in Japan again. If you can find a way to visit, you should in my personal opinion.

Always wanted to visit but it seems they only release cancellation seats for the same day or a day in advance for non-regulars. Here’s hoping I can make it next time in Tokyo…
