Scrub russet potatoes and slice. I used my mandoline. Soak in several changes of water to remove starch. Drain and let fries dry. I use salad spinner to speed that up. Fry in batches at 325F for 6 minutes. Drain and cool on paper towels Once cooled fry again at 375F for 2-3 minutes. Drain and salt using a large bowl to toss them.
Edit: forgot to mention I deep fry them in roughly 3 quarts of canola oil.

We used to make these as a kid. Just cut them up with a butcher knife.

Look good. My method is to boil them in salty water instead of the first fry. Until they almost snap but now quite. From there same method, cool, dry, fry.
