    Measure the temp. How it looks in a photo is totally easy to be incorrect. Just measure the temp with a spot checker. Definitive raw to doneness.

    Looks like a very even cook. Also, it reminds me of ham. One time I dry brined with way too much salt and it tasted like ham. Idk if it happened here. Just made me think of it

    I would not. The pale red color indicates medium well fairly clearly.
