Honestly pretty shitty for a restaurant to use a Sous vide for a simple steak. For the home cook it’s a great tool to avoid fucking up, but paying a restaurant to cook on beginner mode is lame. It’s not as good. And they didn’t even do a good job at it, the sear wasn’t hot enough.
