Ingredients
350g bread flour
100g starter (it's a lot but I was just using up what I had)
245g water
7g salt
Method
Mix water with salt, then starter, then flour until fully cohesive and let autolyse 30 minutes
Stretch and fold two to three times, then coil fold until the dough is ready
Preshape on a lightly floured surface and bench rest 20 minutes
Final shape and into a bowl lined with gelatinous rice powder and cold proof for minimum 24 hours
Bake until nice and golden
