Reverse seared using Traeger set at 250 then seared on Blackstone. Personally, I think these ribeye caps taste incredible. But I am sad when I look at all the ribeyes in Costco that are missing their caps… Also the price is not ideal.

    I personally prefer ribeyes at the medium rare range, and not nearer to blue/lower end of rare. But they came out really nice.

    I like to sous vide them and get the fat fully rendered before throwing them on the grill. Or alternatively if I don’t want to sous vide them, I untie them, get them flat and then grill them to about medium rare plus.

    The cap is the best part of the beast to me but its almost too much of a great thing so I haven’t bought one. My costco stopped making them.

    A costco prime ribeye cap is basically the pinnacle of steak for me. The most perfect cut there is fatty juicy pinwheels crust great if you smoke. You can smoke these to a higher finishing temp for insane crust and it won’t be too dry.

    Idk about the specifics of whether they’re worth it from Costco or not, but they look decent sized, and more importantly, you’ve cooked them incredibly.

    Thicker the steak is, the better in my opinion.

    I love to untie them and grill separately like small steaks. More seasoning surface and I can cook to different finishing temperatures.
