


A few weeks into making my own sourdough and especially loving this recipe with whole wheat and rye! These are my 5th and 6th loaves I’ve made 🙂
Ingredients:
330 g bread flour
75 g whole wheat
50 g rye
10g sea salt
345g lukewarm water
100g active starter
Mix all ingredients and let sit for 1 hour
Perform 4 stretch and folds every hour on the hour.
Cold proof for 12 hours
Bake at 450F for 20 mins lid on, 25 lid off
