Roasted Beats are so easy to do at home, but if you don’t have time, just buy em pre-cooked from the store. I’m telllllling you. Beets truly become magic if you pair them with any creamy cheese, some vinegar, and aromatic herbs! This salad keeps it simple, but it has everything you need with a dressing made of olive oil and balsamic vinegar that gets mixed with your cooked beets and topped with some crumbled feta and chopped vibrant dill. With just these few ingredients, you get all the health benefits of these gorgeous red beets and the classic flavor paring will make anyone a fan!

Beet Salad with Feta & Dill Recipe:
Total Time: 1 hr 30 mins
Yield: 6 servings
Ingredients:
2 pounds medium beets, scrubbed
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
¼ teaspoon salt
¼ teaspoon ground pepper
⅓ cup crumbled feta cheese
2 tablespoons chopped fresh dill
Directions
Preheat oven to 400 degrees F.
Wrap beets individually in foil and place on a rimmed baking sheet. Bake until tender, 1 to 1 1/4 hours. When cool enough to handle, peel and cut into 1/2-inch cubes.
Whisk oil, vinegar, salt and pepper in a large bowl. Add the beets and feta and toss to coat. Serve sprinkled with dill.
