Fresh lemongrass just hits different, compared to the dried stuff. Pair it with a few simple ingredients to make meal prep chicken thighs that will feed you all week.
Also served with half a large carrot, and two small Napa cabbages. Always eat your veggies!
**Instructions**
1. Mix marinade ingredients with chicken thighs and refrigerate overnight. 2. The next day, begin by starting the rice cooker. 3. Preheat the oven to 200C/400F. Line a baking sheet with aluminium foil and parchment paper. 4. Roast chicken for 30 minutes, skin side up. 5. In the meantime, make rice, and cook some vegetables. 6. Assemble and serve.

* 1kg boneless skin on chicken thighs
* 5 tsp fish sauce
* 1 stalk lemongrass, minced
* 1 Thai chili, minced
* 3 cloves garlic, minced
* Scallion greens, minced
* 5 tsp sugar
