2-2.5 lbs onion, diced small.

1/4 cup-ish bacon grease…or olive oil if you have none.

1/2 cup maple syrup

1/4 cup balsamic vinegar

1/4 cup apple cider vinegar

pinch of salt

Crock pot on low while you dice the onions to melt the bacon fat.

Add onions and cook for around 12 hours or until onions are mostly caramelized. Set the lid to not be fully seated so steam can escape and reduce the onions somewhat as they cook.

Add syrup, vinegar, and salt to pot, mix in well, and continue to cook with the lid half on until it reduces to a relish-y consistency, 4-6 hours.

Use as a condiment or topping on…yes.

    If you do 5lbs of onions you can take the other half and make some sweet French onion dip. Alton brown has the best recipe.

    Cuz next time I make that, I think I need to make some of your stuff cuz it sounds gooood
