Pesto Gnocchi

+they’re gluten-free

gnocchi:
• 430g potatoes
• ~130g potato starch
• 1 egg
• salt

boil → mash → mix → shape → cook

pesto:
• garlic, basil, pine nuts
• parmigiano
• olive oil, salt, pepper

pesto + pasta water → add gnocchi → toss
finish with pine nuts + parmigiano
