





First off, forgive me, bc my pics are not the best, but I’ll post a few then post a few thoughts on the line up I had this last few days.
Kato. Stopped in for a few bites to pregame Hayato. The little uni and caviar puff pastry was fantastic.
Hayato. By far the most subtle and beautifully prepared Kaiseki I’ve had to date. I need to go back many more times to really get the beauty of chefs cooking.
Noma LA. The Paramour Estate and set up alone may be worth the price of admission on its own. This is hospitality at its finest. The bbq crab course early on was the star of the show for me: I would and probably will go back before the run is over.
Corridor 109. The mackerel toast was one of the best bites of the weekend. Again, need to revisit, but really enjoyed this place.
Restaurant Ki. Once you find the actual restaurant, and this is no small accomplishment 😅, buckle up buttercup. This is as one of those not even just every dish, but every bite was tip top. For boldness and range of flavors, this won the weekend for me.
The 79 Tatti: 🤯🤯🤯🤯🤯. This is what wine with excellent pedigree and bottle care can be. Epic bottle.

Ive had the 79 Taittinger Comtes before, and it comes super close in experience to the 79 Krug. For me though, that Liger-Belair Echezeaux Grand Cru would be the highlight. One of the best producers of Ech of all, and even better than DRC Ech, in my humble opinion.

The wine line up actually trumps the impressive restaurant line up.

I’m impressed you can eat that many multi courses in one weekend. I need to space them out especially with drink pairing in order to visit that many.
