If I had to pick one type of food to eat for the rest of my days it would be Mediterranean food. I love the taste, that it’s good for you (read about the health benefits of the Mediterranean Diet) and makes my body feel fueled in a healthy way. This lovely tzatziki chicken salad recipe tastes so good and I love the versatility of it.


The first night we ate this
Mediterranean-style chicken salad as a salad. The second night we ate it in a wrap. I gave some to a friend undressed, and she dressed the chicken and vegetables and made a sandwich, and the second night she served it over greens. This quick homemade chicken salad is really a lovely recipe that works for lunch or dinner, sandwich or salad.

To make this high-protein Mediterranean
tzatziki chicken salad you will need just a few wholesome, simple ingredients. Here is your shopping list: plain Greek yogurt, cucumbers, garlic, olive oil, fresh dill, cooked chicken, lettuce, grape tomatoes, pepperoncini peppers, kalamata olives, red onion and feta cheese (read about the health benefits of feta cheese).


I made my cooked chicken by simmering a whole chicken in water with carrots, celery, onions salt and black pepper for about an hour. I saved the chicken stock for use in other recipes and cut up some of the cooked chicken for this recipe. Save the rest for other recipes. You can also use cooked rotisserie chicken or just bake your own before assembling the salad. You can even make a rotisserie chicken in the slow cooker.

Ingredients 



1 cup plus 2 tablespoons plain Greek yogurt 
3 – 4 Persian or 1/2 English cucumber, sliced (half the Persian or quarter the English)
2 – 3 garlic cloves, minced or pressed
2 tablespoons olive oil
2 tablespoons fresh dill, finely chopped
2 cups cooked chopped chicken
6 ounces chopped Romaine lettuce or your favorite lettuce
1 cup grape tomatoes, halved
1/2 cup pepperoncini, sliced (optional)
1/2 cup kalamata olives, sliced, if desired
1/4 cup chopped or thinly sliced red onion
4 ounces feta cheese, crumbled


Here’s how to make it: 



Make the tzatziki sauce in a medium bowl by combining the yogurt, cucumber, garlic, olive oil and fresh dill. Add salt and black pepper and taste, adding more seasoning if needed.

In a large salad bowl add your romaine, tomatoes, olives, red onion, chicken, feta and peppers, if desired. (If raw onions bother you try easy pickled red onions you can make ahead and keep in your fridge for other recipes.)

Add some tzatziki dressing and toss, tasting to see if you need more dressing, salt or pepper. (For some spice, add some crushed red pepper flakes.)
