I lost over 100lbs, and the biggest lesson I learned is that if the food doesn’t taste amazing, you won’t stick to the plan. This Greek Quinoa Salad is the first recipe in my “Flavor First Weight Loss” series. It’s packed with protein, high in fiber, and actually has flavor unlike most diet food!

🧾 Ingredients 🧾

1 cup uncooked quinoa
2 cups boiling water
1 teaspoon kosher salt
1 English cucumber, sliced into semi-circles
10 ounces cherry tomatoes, halved
1/2 red or white onion, finely chopped
1 and 1/2 cups fat free Greek yogurt
Juice of 1 lemon
1 tablespoon Greek seasoning
5 ounces fat free or reduced fat feta
1 teaspoon white sugar
Black pepper, to taste
1–2 teaspoons kosher salt (depending on taste)
2 tablespoons fat free milk

Optional Add-ins:
Chopped parsley
Chopped olives
Chopped bell peppers

👨‍🍳 Instructions 👨‍🍳

1) Rinse the quinoa thoroughly under cold running water using a fine mesh strainer.

2) Transfer the rinsed quinoa to a medium saucepan. Add the boiling water and 1 teaspoon of kosher salt. Bring to a boil over high heat, then reduce to a low simmer, cover, and cook for 20 minutes.

3) Once cooked, fluff the quinoa gently with a fork and let it cool to room temperature. For faster cooling, spread it out on a baking sheet.

4) In a large mixing bowl, whisk together the Greek yogurt, milk, lemon juice, Greek seasoning, sugar, salt, and black pepper until smooth. Taste and adjust salt as needed, see note below.

Important Note: If your Greek seasoning already contains salt, you may not need the additional 1-2 teaspoons of salt.

5) Add the cooled quinoa, cucumbers, cherry tomatoes, onion, and feta to the bowl. Mix everything together until well coated in the dressing.

6) Cover and refrigerate for at least 1 hour to let the flavors come together. Give it a good stir before serving. Some light moisture separation is completely normal.

  2. Chicken tacos are actually really good for losing calories. If you use corn tortillas and not add storebought salsa on it. It all contains sugars
