Creamy, cheesy, and loaded with crispy bacon, these Twice Baked Potatoes are the ultimate comfort food! With a perfectly seasoned, fluffy filling and a golden, bubbly cheese topping, they make a delicious side dish or a meal on their own. Easy to make and impossible to resist!
INGREDIENTS
3 large Russet potatoes
2 tbsp olive oil
100 ml heavy cream
2 tbsp butter
½ bunch chives chopped
50 g mozzarella cheese grated
50 g cheddar cheese grated
5 strips bacon
2 tsp large sea salt
Black pepper to taste
Chili flakes to taste
➡️Prepare the Potatoes: Preheat oven to 400°F (200°C), rinse potatoes, poke holes with a fork, rub with olive oil, sprinkle with salt, place on a baking sheet, and bake for 60-70 minutes until fork-tender.
➡️Cook the Bacon: While potatoes bake, cook bacon in a pan over medium heat until crispy, then cool and chop into bits.
➡️Prepare the Filling: Once potatoes are done, let cool for 5 minutes, slice off tops, scoop out insides, and mash with butter, heavy cream, chives, bacon, mozzarella, salt, pepper, and chili flakes.
➡️Stuff and Bake Again: Spoon the mixture back into potato skins, top with cheddar cheese, and bake at 400°F (200°C) for 15 minutes until cheese is melted and golden.
➡️Serve and Garnish: Remove from the oven, top with sour cream, bacon bits, and chives, then serve hot and enjoy!
