Beautiful first harvest! You want to pick them while the skin is still very shiny. Once the skin starts looking dull/matte, they’ve gone too far. This one is a 10/10.

That looks perfect. Mine are running smaller. Same variety, but mines in fairly shallow soil.
It sounds weird, but one of my favourite ways to eat eggplant is pan seared then in sushi maki rolls.
