I’m in the industry on supply side. This is less price gouging and more climate change. Hamachi in particular had a bad year with around a 30% die off in Japan last season. This led to higher prices and lower quality at the same time. While farms in Japan are working on solving the underlying issues, it’ll take a few years to resolve.
