If you like Italian lasagna, you’ll adore Greek pastitsio:

a meaty layer meets a creamy one, all laying on a base of pasta! This is what we’re preparing in the first episode of our new series, #ThisKindOfCooking. Now let’s talk about the recipe! Cook pasta in salted water – we used Eden Premium (outside of Hungary Mill & Folks) pasta – and you can too, getting 15% off with every online order using our coupon code KRISTOFNIMI15. Drain it, and mix it with olive oil and a bit of chickpea flour – this makes slicing easier. Toss in fresh herbs, nutritional yeast for a cheesy flavor, salt, and pepper. Spread it in the bottom of your oiled baking dish.

For the meaty layer we use peas protein. Sauté chopped onions and garlic in olive oil, add your protein, and start building that umami flavor: sun dried tomatoes, mustard, soy sauce, balsamic vinegar, a drizzle of syrup, smoked paprika, salt, and pepper. Pour in some tomato sauce and a splash of red wine. Again, a bit of chickpea flour helps with an easier slicing. Spread it over the pasta.

For the creamy layer, use any cooked root vegetable mash, like potatoes, parsnips, or celeriac. Soaked, blended nuts or seeds like sunflower seeds or almonds can go in as well. Put it in the blender and make it creamier with any plant-based milk, and don’t forget the nutritional yeast. Flavor it with crushed garlic and herbs. When ready, gently smooth it over the meaty layer.

Bake it at 180 celsius degrees for about 35 minutes for a nice golden top, let it cool slightly before slicing, and place it on the middle of the table, hosting your Christmas and Hanukkah dinner party.   1. There are (and have been) so many cooking shows on German TV (I am in Germany), but none of them brought me as much joy as yours. The love you show for each other and for all the ingredients and the pastitsio warms my heart. And I will cook this pastitsio. And I will try it with tahini. It looks sooo delicious.
