What’s the dish
Spaghettini aglio olio with clams and cherry tomatoes.
Private chef sharing his tips! I do this dish quite often, trial and tested, and all my clients love it. No salt needed, except in the boiling water, the salinity comes from the clams itself. Sweetness from the cherry tomato. Only a squeeze of lime juice for the soury sensation.

Recipe
3 cloves garlic
1tsp chilli flakes
2stems parsley
100g Spaghettini
500g Clams
100g Shao Hsing wine/White wine
Olive oil
Lime/Lemon juice
Salt for boiling water
