Savory Waffle Sandwiches (2 Servings)

Ingredients

For the Waffles (4 pieces):

• 160 g flour
• 1 tsp baking powder (approx. 5 g)
• 2 eggs (or egg substitute)
• 120 ml milk
• 2 tbsp oil (approx. 20–25 g)
• 100 g Gouda cheese (grated)
• 2–3 tbsp chives (fresh or dried, approx. 6–10 g)
• 1/2 tsp salt (approx. 3 g)
Pepper to taste
For the Filling:

• 4–6 slices of turkey breast
• 6 mini mozzarella balls
• Gouda Cheese
For the Sweet Chili Mayo:
–
• 4 tbsp mayonnaise (approx. 60 g)
• 2–3 tbsp sweet chili sauce (approx. 30–45 g)
• 1 pinch of salt
Preparation

1.Prep:

Whisk the eggs, milk, and chives together; let the mixture sit for about 3 minutes.
2.Make the Batter:

Stir the oil into the egg and milk mixture. Add the flour, baking powder, salt, and pepper, and stir until smooth. Finally, fold in the grated Gouda cheese.
3.Bake the Waffles:

Preheat your waffle iron. Use about 2–3 tbsp of batter (30–45 g) per waffle. Bake for 3–5 minutes until dark golden brown.
4.Prepare the Filling:

Briefly roast the turkey breast in a pan. Halve the mini mozzarella balls, place them on top of the turkey slices, and let them melt for about 1 minute.
5.Make the Sauce:

Mix the mayonnaise, sweet chili sauce, and salt until well combined.
6.Assemble:

Spread the sauce onto the waffles, add the turkey and melted mozzarella, and add any additional toppings you like.
