  1. Ingredients:
    – 1½ cups extra-virgin olive oil
    – ¾ cup red wine vinegar
    – Juice of ½ lemon
    – 1 tbsp Dijon mustard
    – 3 tbsp fresh oregano (or 1 tbsp dried)
    – 2 garlic cloves, minced
    – 2 tsp kosher salt
    – ¼ tsp red chili flakes
    – 1 tsp black pepper

    Steps:
    – Add vinegar, lemon juice + Dijon to a bowl
    – Slowly whisk in olive oil until emulsified
    – Stir in oregano, garlic, salt, pepper + chili flakes
    – Whisk 30–60 seconds until slightly thickened
    – Store in fridge + shake before using
