
Weekly meal prep for someone trying her best to follow the medi diet.
Baked chicken filet mignon (smoked paprika marinade), a big pot of soup (cauliflower, peas, spinach, edamame, silken tofu), four portions of overnight oats with chia seeds, flax seeds, rolled oats, protein powder, mashed banana, peanut puree, oat milk), boiled potatoes.
Pantry items that will be used through the week: avocados, sweet potato, cherry tomatoes, pears, bulgur/quinoa, white, black, red kidney beans, black lentils, tzaziki, hummus.

Very nice! At the beginning med diet might be a bit strange, but after a while you’ll get used to it and couldn’t live without. Keep going!
Smoked paprika marinade? Can you share the recipe? I’m always looking for a good marinade so I’m not always making the same thing over and over.
