Preparation

  1. Bake the sweet potatoes for 1 to 1 1/2 hours, or until thoroughly tender. (They can be tucked into corners of the oven at any time during the roasting of the turkey.)
  2. Remove, cut in half lengthwise, scoop out the pulp into a bowl (reserving the shells) and mash with as much butter as you dare to use. Season to taste and add more butter.
  3. Spoon the mixture back into the reserved shells and arrange on a baking sheet. Reheat before serving (after the turkey has been removed from the oven).
