**Stewed Rhubarb** (Sugar Free)
Either you are a rhubarb fan or not! Stewed rhubarb is excellent on plain whole fat Greek yogurt as a treat. Great news, rhubarb has only 1.7 net carbs per half cup and is keto friendly. Rhubarb stalks are available in the produce section in the spring.

**Ingredients:**
2 cups chopped rhubarb
¼ cup powdered erythritol
1 tsp fresh lemon juice
**Directions:**
Add all ingredients into a saucepan.
Bring to a high simmer, stirring constantly. Cook for about 10 minutes until thickened and mushy. This method is a little chunky but well cooked.
Adjust for sweetness.
Store in a tightly sealed container in the fridge. Perfect for sugar free strawberry rhubarb jam.
