I have gestational diabetes, and managing my blood sugar using a close-to-keto diet. I love Thai curries but have found they spike my blood sugar, most likely due to added sugars.

Had some cod on hand but wanted the opposite of a light meal. Made some substitutions to this recipe and thought I would share, it turned out really amazing. Flavorful, comforting and interesting. High protein, high fat, high fiber, very low carb.

The substitutions I made were:

– Subbed frozen cauliflower for the baby potatoes

– Used 1 can of unsweetened coconut milk and 1 can of vegetable stock, instead of 2 cans coconut milk.

– Added a box of frozen spinach for bulk and nutrition.

– Used Fat Snax crackers (plain flavor) instead of oyster crackers; did not sautee these as instructed, just sprinkled on top.
