This is the result of my first reverse sear on my new weber genesis. I usually grill fillet on high direct heat for 3.5 minutes à side for a medium rare cut, but this time around I got the grill to 250 and indirectly took the steak to 115. After this I removed it and cranked the heat to get the grill to 600f. Then 60 seconds a side (turned a quarter at 30 seconds) for the sear. Overall I am happy with the result. I think next time I would remove at 105F as this isn’t as pink as I would have liked. Any other tips for next time? Thanks!
