Ingredients:
4 large eggs,
200 ml milk,
Tbsp white egg powder (albumen)
Tbsp olive oil
Pinch of salt. Can replace with sweetener if making sweet pancakes.
Instructions:
Mix the albumen with a little milk. Ensure it is completely dissolved. In a separate bowl, combine the eggs, remaining milk and olive oil. Mix well. Add the dissolved albumen and mix in. Add a pinch of salt.
Warm frying pan on medium heat and add teaspoon of olive oil. Spoon batter into pan, enough to cover base. I use a 28cm pan, 80ml batter gives a nice thin pancake. Increase the amount of batter if you want a thicker pancake. Flip over when bottom of the pancake is lightly brown. Repeat for remaining batter. Enjoy sweet or savoury.
