I wanted something Sloppy Joe-like and I had some taco meat and this [ended up being amazing!](https://i.imgur.com/uCPRvhm.jpg) Pics after recipe. It’s super easy! Obviously feel free to alter however you like! (Prep/Cook times are estimates; I’m bad about not paying attention)

**Prep Time:** 20 mins

**Cook Time:** 20 mins

**Macros:** Calories – 499 | Protein – 37g | Fat – 29g | Net Carbs – 14g | Carbs – 48g | Fiber – 32g

**Ingredients (Totals for whole recipe)**

* Chili Powder – 1 Tbs
* Garlic Powder – 2 Tbs
* Onion Powder – 1/2 tsp
* Red Pepper, Crushed – 1/4 tsp
* Oregano, Dried – 1/4 tsp
* Paprika – 1/2 tsp
* Cumin, Ground – 1 1/2 Tbs
* Black Pepper, Ground – 1 1/2 tsp
* Morton LiteSalt – 2 tsp
* Tomato Paste (Happy Harvest) – 1/4 cup
* Jalapeno Peppers, de-seeded, Chopped – 1/3 cup
* White Onion, Chopped – 1/3 cup
* Ground Beef, 85% lean – 1.15 lbs (1 lb cooked and drained)
* Truvia Brown Sugar Blend – 2 Tbs
* Worcestershire Sauce (Laura Lynn) – 2 tsp
* Yellow (or Dijon) Mustard – 1 Tbs
* White Wine Vinegar (Regina) – 2 tsp
* Malbec Red Wine (Kirkland) – 1/4 tsp
* Beef Broth, Unsalted (Fit & Active) – 1 Cup
* Mission Whole Wheat Carb Balance Tortillas
* Sour Cream (Friendly Farms

**Step 1**

Brown Beef over medium heat and chop until well crumbled. Drain out grease. While beef is cooking set oven to 170 F (~77 C).

**Step 2 (Taco Seasoning)**

In small bowl, combine the following:

* 1 Tbs Chili Powder
* 1 Tbs Garlic Powder
* 1/2 tsp Onion Powder
* 1/4 tsp Red Pepper Flakes, Crushed
* 1/4 tsp Oregano, Dried
* 1/2 tsp Paprika
* 1 1/2 Tbs Cumin, Ground
* 1 1/2 tsp LiteSalt
* 1 1/2 tsp LiteSalt
* 1 tsp Black Pepper, Ground

**Step 3**

Reduce heat to low and stir in taco seasoning from Step 2.

**Step 4**

In medium bowl combine the following:

* 1/3 Cup Chopped Jalapenos
* 1/3 Cup Chopped Onions
* 1/4 Cup Tomato Paste
* 2 Tbs Brown Sugar
* 1 Tbs Mustard
* 2 tsp Worcestershire
* 1 Tbs Garlic Powder
* 1/2 tsp LiteSalt
* 1/2 tsp Black Pepper

**Step 5**

Stir mixture from Step 4 into taco beef. Add 1 cup Beef Broth and stir. Bring to a simmer uncovered for 10 – 15 minutes.

**Step 6**

Align 2 tortillas [overlapping on small baking sheet](https://i.imgur.com/FMvSM5r.jpg) and warm in oven for a few minutes (you may add the cheese at this point; I tore it up and put it on the “bottom half” of the tortillas). Warming the tortillas makes them roll up better.

**Step 7**

Increase oven to 275 F (135 C) and remove tortillas. Top with [cheese and/or meat](https://i.imgur.com/mfzySgr.jpg) (put it closer to the “bottom” of the tortillas; I didn’t and it made it harder to roll). [Roll](https://i.imgur.com/REY3CA0.jpg) the burrito by tucking the bottom over the filling then folding the sides over to the center, then roll away from you so it’s sitting on the ‘seam’. Place back in oven. It’s ok if it’s not up to 275. You just want to heat it until it starts to slightly brown, but before the tortilla gets stiff.

**Step 8**
