Keto Chocolate Cake, using zucchini for additional moisture.
Ingredients for Cake
200 grams zucchini,
4 eggs,
Cup coconut flour,
Cup cocoa,
2 tablespoons sweetener,
1 tablespoon olive oil,
1 teaspoon baking powder.
Ingredients for the topping:
50g butter,
50ml cream,
Tbsp sweetener,
3tsp cocoa.
Instructions
Blend the zucchini and eggs in a blender. In a bowl add the dry ingredients with the blended mixture. Mix thoroughly and add the oil. Pour into a baking dish and smooth out. Bake in a preheated oven at 180 degrees celsius for 30 minutes. Let it cool to room temperature.
For the topping:
Melt 50 grams of butter and 50 milliliter of cream in a frying pan, add a teaspoon of sweetener and 3 teaspoons of cocoa, stirring until thick. Pour onto the cake and smooth out over the top. Refrigerate.
Enjoy. Tastes great with some coconut cream.
