By swapping one egg for 1/4 cup coconut milk and adding a little almond flour, this recipe became utterly amazing.

4 oz Cream Cheese
3 eggs
1/4 cup coconut milk (the thick canned kind, not “coconut milk drink”)
1 tablespoon melted butter
1 teaspoon vanilla extract
1 tablespoon powdered stevia/monkfruit
4 tablespoons coconut flour
1 1/2 teaspoons baking
powder
2 Tbsp almond flour
Blend all together in blender. Cook in waffle maker (makes 2) or make pancakes (about 8)
