Calamari cutlets are crispy without deep-frying. You can serve this alone with a squirt of lemon or with a sour cream and spring onion garnish. Very easy to make, delicious as a snack or as part of a fish dish.
Ingredients:
Cutlets:
calamari 170-200 grams,
70 g of bacon,
2- 3 cloves garlic,
half an onion,
1 egg,
Salt and pepper to taste.
Garnish:
100 ml sour cream,
2-3 Spring onion stalks, chopped,
Chilli.
Method:
In a blender, combine the calamari, bacon, onion and garlic. Add a little salt and pepper, remember the bacon already contain a lot of salt. Blent till it is a puree. Add the egg and blend in. The puree should be quite thick, if not, add little psyllium husk.
In pan on medium heat, add some fat for frying. i use lard. Spoon the puree per tablespoon size into the pan. Fry on each side for approximately 2 minutes until golden brown.
Serve with sour cream, spring onion and chilli as a garnish.
