Ingredients:
2 small zucchini
1 tbs olive oil
Salt, pepper and Italian herbs seasoning to taste.

For the filling:
150 gram ricotta
150 gram mozzarella
1 egg
3 tbs marinara sauce

Method:
Cut the zucchini into 1/2cm strips. Place on a baking tray and brush with olive oil, salt, pepper and spices. Bake for 20 minutes at 200 degrees celsius.

For the filling, combine the ricotta, mozzarella and egg in a bowl, season to taste and mix through.

In a baking dish, put 3 tablespoons of marinara sauce. Roll each zucchini strip with filling and place on the sauce in the dish.

Cover with the remaining sauce and mozzarella cheese.

Bake for 20 minutes at 200 degrees celsius.
